Spiral Cookies : Step-by-Step Recipe

Anyone who saw these on SJ's blog and wanted to make them, raise your hands.

Yep, that's what I thought.

They are so pretty and look so homely and nice right? That's what actually got me started on this quite messy yet great decision to try them myself.

Disclaimer: I am not very artistic. I believe artistic people can make food look nicer and this is especially true for desserts and some bakes.

That really didn't discourage me though. I have step-by-step pictures and although my cookies didn't turn out as smooth and spirally as SJ's, they still wow-ed a lot of a people and tasted great.

We need to prepare 2 batches of dough and since each require 1/2 an egg yolk, let's get that out of the way.
Lightly beat an egg yolk and set aside. We will later halve this.

Melt (or bring to room temperature) 1/2 cup unsalted butter and add 1/2 cup sugar to that. Beat until well combined.

Add 4 drops of vanilla essence to this along with a pinch of salt. Mix well. Now add half the beaten egg yolk and 1.5 cups of all-purpose flour.

Mix well to form a soft dough like so. Don't knead, just incorporate with fingers and bring together.

For the chocolate dough, do the same with the butter and sugar, but omit the vanilla and add 1/4 cup unsweetened cocoa powder. Mix well.

To this, add 1 and 1/4 cups all-purpose flour. If you find the dough too soft, you can add a couple of spoons of flour. I didn't have to add extra though.

Again, combine well with fingers to form a soft dough. No need to knead. Heh.

Now, refrigerate both doughs for 30 mins. Take out your book and read while you wait. If you are impatient like me, go take a nap and you won't feel the time pass.

After 30 mins, take out the chilled dough, transfer to a floured surface and roll out as above. This is not going to be the easiest thing to do. I later heard that if you do the rolling between plastic sheets or butter paper, it makes things very easy. Do try that cuz in this method, there were a lot of broken pieces that I had to patch in later.

Gently transfer the chocolate layer and place it over the vanilla layer. I used a spatula - say hi to my fave steel spatula!

I know this doesn't look perfect. That's ok. Trust me on this and let's carry on.

Now, roll the flour from the short end, gently, covering up as many split areas as you can. Its ok even if the layers are not ultra-smooth and imperfect. Like I said, wait for the end-result and you'll see.

SJ mentions refrigerating at this point but I was super-charged after my nap so I ignored that.

Cut gently into 1/2" discs. Look at that!!

Are they pretty or what?! I didn't use a sharp enough knife which is why the biscuit sides are not as smooth as I'd have liked them to be. Anyway, lesson learned.

Here's another look. I couldn't get over how pretty they looked. It was almost like when I saw the Taj Mahal for the first time. Almost.

Note the huge hole on the top of my dough log. It doesn't matter. Keep cutting and ignore that. Everything will turn out fine.

Bake in a pre-heated oven at 350F/180C for 15 mins until the white part of the cookies turn a light golden brown.

Now that you ask, I have no clue how'd I find out if this cookie is done if it were all chocolate. I guess I'd go by the smell and time on original recipe as I did for my chocolate melting moments.

Makes: 28 cookies (approx.)

What I Used:

Vanilla Dough:
1 1/2 cups all purpose flour
1/2 cup unsalted butter (at room temperature)
1/2 cup sugar
1/2 egg yolk, beaten
4 drops vanilla essence
A pinch of salt

Chocolate Dough:
1 1/4 cups all purpose flour
1/2 cup unsalted butter (at room temperature)
1/2 cup sugar
1/2 egg yolk, beaten
1/4 cup unsweetened cocoa powder

How I Made It:

1. Start with the vanilla dough. Beat the until and sugar until well incorporated. Add the egg yolk, salt and vanilla essence to this. Mix again.

2. Add the flour next and mix well to form a soft dough.

3. For the chocolate dough, beat butter and sugar, add the cocoa powder and mix well without any lumps. Then add the egg yolk and mix well. Finally, add the flour and mix well to form a soft dough.

4. Refrigerate both doughs for 30 mins.

5. After 30 mins, roll out gently into flat squares (as square as you can make it). Place the chocolate layer over the vanilla layer. Roll out from the short end gently.

6. Cut into discs of 1/2" thickness and bake and transfer to a greased or lined cookie sheet.

7. Bake in a pre-heated oven at 350F/180C for 15 mins until the vanilla part turns a light golden brown. Keep an eye on the cookies starting from 10 mins, just to be on the safer side.

Ginger Cookies

When I redid this site a couple of months back, I added a link on the top navbar where readers could request a recipe. Honestly, I don't know what I was thinking. This is something you would probably find on Tarla Dalal's or maybe Marta Stewart's official site, not a teeny-weeny amateur cook aspiring to bake a perfect loaf of bread someday! But clearly, others have more faith in me than I myself do and I already have close to 12 recipe requests lying in my inbox. To everyone who submitted one, please be patient which I figure it out! Here is the first one in the series - Ginger Cookies.

Personally I don't like ginger-flavoured anything except ginger tea. But when Soma from Kuwait requests Ginger Cookies, she gets ginger cookies. Soma, hope you try and enjoy this recipe.

What I Used:

Makes 24 cookies
Adapted from allrecipes
  • 2 cups all-purpose flour (I used maida)
  • 3/4 cup butter, softened
  • 1 1/4 cup sugar
  • 1/2 tsp grated ginger
  • 1 egg
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon water
  • 1/4 cup molasses (I used 3 tbsp brown sugar instead)
  • 2 tbsp sugar to roll the cookies in
How I Made It:

1. Sift together the flour, baking soda and salt. Set aside.

2. In a large bowl, cream together the butter and the sugar until light and fluffy. Beat in the egg, then stir in the ginger, water and molasses/brown sugar.

3. Gradually stir the sifted ingredients into the brown sugar mixture. Shape dough into walnut sized balls, and roll them in the remaining 2 tablespoons of sugar.

4. Place the cookies 2 inches apart onto an ungreased cookie sheet, and flatten slightly.
Preheat oven to 350 degrees F (175 degrees C) Bake for 8 to 10 minutes in the preheated oven.

5. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely. Store in an airtight container.
I avoided the normally common ingredients for ginger cookies, like cloves and cinnamon because I am not much of a savory cookie lover. Also, I was out of cloves :D These came out quite chewy and very lightly ginger flavoured. Goes well with tea.

Baked HEARTS for your VALENTINE

I have never been much of a Valentines Day person. I am one of those people who feel that expression of love should not be restricted to a day. But somehow the season is contagious. With shops selling cards and gifts and little knick-knacks for your loved one, and events in the food blogosphere gently nudging us into cooking something for our valentine. Now, that's something I don't mind.

I always feel inadequate when I need to bake anything. Mainly because I have an OTG without temperature control and just 2 baking dishes in which nothing except a cake can be made. I don't have muffin trays or pie dishes or even cookie cutters. I normall make round-shaped cookies by patting them into shape with my hands. But if I need anything heart-shaped, that's a different story, right?

But I used my hands again! Its crude, its far from perfect, but its still a heart!

Heart-Shaped Shortbread Cookies for your Valentine

Makes a dozen cookies

What I Used:

Flour - 1 cup
Unsalted butter - 1/2 cup and a little more
Powdered sugar - 1/2 cup (measure after powdering)
Salt - one pinch
Vanilla extract - 1/2 tsp



How I Made Them:

1. Mix the flour and salt well and keep aside.

2. Cream the butter well and mix in the sugar. Cream further until it has dissolved in the butter.

3. Add the vanilla and mix well.

4. Gently fold in the flour and make into a soft dough. Refrigerate cling-wrapped, for an hour.

5. Gently roll the dough and cut into desired shape. I make small balls and made the heart shape with my hands :)

6. Bake in a 180C pre-heated oven for 10-12 minutes.

Share with your valentine while still warm and get ready for the compliments :)

Soy-Oats Sugar Cookies

Weekend breakfasts are mostly lazy affairs for which normall I make an omelette or scrambled eggs or have just toast with kothamalli chutney. But when Rajitha inspired us to think about a soy breakfast, I started thinking of what I could make and finally settled on some low sugar cookies. I had these warm cookies on a Sunday morning with a hot cup of chai.

Soy-Oats Sugar Cookies



What I Used:

Makes 8-10 cookies

Soy flour - 1 cup
Maida - 1/3 cup
Oats - 1/4 cup
Butter at room temperature - 3/4 cup
Powdered sugar - 1/2 cup (this makes the cookies mildly sweet, so you can adjust according to your taste)
Cinnamon powder - one pinch (optional)
Salt - one pinch

How I Made It:

1. Sift the maida and soy flour with salt until its totally blended.

2. Mix the butter and sugar with cinnamon powderand then add the flour to form a loose dough. Then mix in the oats gently.

3. Roll out gently and cut with a cookie cutter in desired shapes. I don't have cookie cutters so I made small balls of the dough and flattened it on my palm.

4. Lay on a greased tray and bake in a pre-heated oven for 15-18 mins, until the edges are golden brown.

Enjoy with a hot cup of coffee/milk/tea.

Low Fat Christmas Sugar Cookies

The Christmas spirit is really beginning to settle in with carol practices and white gifts and fruit cakes and cookies all around. I have a list of events happening in the food blogosphere this month and the one thing that has been upmost in my mind is Susan of Food Blogga's event, 'Eat Christmas Cookies'. I mean, when else do you eat them.

I haven't baked much cookies in my life. The one recipe that clearly comes to my mind is the butter cookies I used to make often when I was in college. It called for copious amounts of butter so I was on the lookout for a low fat Xmas cookie recipe. Found a simple one here and tried it out. Came out nice and crunchy and yummy. I halved the ingredients amount.

Low Fat Christmas Sugar Cookies



Makes 15 medium-sized cookies

What I Used:

Softened butter - 2.5 tbsp
Sugar - 5 tbsp (Add more if you like sweet cookies, after all they are called sugar cookies!)
Egg - 1
Flour - 1 cup
Baking powder - 1/2 tsp
Vanilla essence - 1/2 tsp
Salt - one pinch

How I Made It:

1. Sift flour, salt and baking powder till all three have mixed properly.

2. Cream butter and sugar.

3. Slowly add the lightly beaten egg and the flour mix to this to make a dough that will be slightly crumbly.

4. Wrap in a plastic sheet and refrigerate for 2 hours.

5. Once cool, roll out the dough and cut into desired shapes. I dont have any cookie cutters so I made smal balls and flattened them out with my hand. I also sprinkled some sugar on top before baking.

6. Preheat oven and bake the cookies at 350 degree F/180 degree C. They were done in 8-10 mins, so stick around!
